Tresco and Bryher chefs will be taking part in the in the annual Cornwall Catering 2000 competition at Camborne-Pool-Redruth College next month.
Euan Rodgers and Graham Shone from the Hell Bay Hotel and Peter Hingston the head chef at The Island Hotel and Christian Gott from The New Inn were chosen to take part in the event after putting forward menu entries to last November.They will take part in the competition on February 2 at the college.
Euan Rodgers, the Manager at the Hell Bay Hotel, told Scilly News “We are obviously delighted to have qualified for the final and we are looking forward to showcasing the estates culinary talent along with local Scillonian and Cornish produce.”
Each menu has to be three courses and 24 meals have to be made. Each meal has to cost ?12 or less. Obviously nothing can be preprepared. The dishes specified on the menus have to use Cornish ingredients and seasonal vegetables including fish from the county.
Just to wet your appetites this is the menu the Scillonion chefs will be submitting:
A Tian of Bryher Crab and Cornish Smoked Salmon, Pan-fried Bryher Lobster, Cr’me Fraiche and Lime, Herb Vinaigrette
Roast Fillet of Cornish Beef, Oxtail and Marrow Ravioli, Bryher Cabbage, Seasonal Root Vegetables, Red Wine Reduction
Bread and Butter Pudding with Tresco Honey, Clotted Cream and Cornish Marmalade Ice Cream, Orange Custard

They will be judged on their hygiene, originality, skill, time management, safe working practices,flavour and wastage .
The judges will be Paul Ripley, Michael Caines, John Waterhouse and Ben Tunnicliffe.
